Cinnamon Swirl Banana Muffins
INGREDIENTS
THE BANANA BREAD
- 3-4 overripe bananas, smashed up
- 1/3 cup melted unsalted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups flour
THE SWIRL
- 1/3 cup sugar
- 1 tbsp cinnamon
HOW TO MAKE IT
- Preheat oven to 350°F
- Line your muffin pan with 12 paper liners or spray a 9×5″ loaf pan with cooking spray
- Mix bananas, butter, sugar, egg, and vanilla together
- Sprinkle baking soda and salt around on top of the banana mixture; then gently stir in flour
- Be careful not to over-mix!
- In a small dish, mix together the 1/3 cup sugar and 1 tbsp cinnamon
- Fill the paper liners halfway with batter then evenly distribute 1/2 the cinnamon-sugar mixture over the batter (or add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan)
- Add the rest of the batter to the paper liners and then sprinkle the leftover cinnamon-sugar on top (or sprinkle the rest of the cinnamon-sugar all over the loaf)
- Bake for 20-25 minutes (50-60 minutes for a 9×5″ loaf)

GARLIC MONKEY BREAD
• 2 (7.5 oz) cans buttermilk biscuits
• 6 Tbsp butter, melted
• 2 cloves garlic, minced
• 1 Tbsp dried parsley flakes
• 1/2 cup grated Parmesan cheese
Direction:
1. Cut biscuits into 4 pieces and place in a bowl. I like to use a pizza cutter to them up.
2. Combine the melted butter, garlic, parsley, and cheese together and pour over the biscuit pieces.
3. Gently toss the biscuit pieces to get evenly coated with the butter mixture.
4. Using a 12 cup muffin tin, place 6-7 pieces of the coated biscuit dough into each muffin cup.
5. Bake at 400 degrees for 12-14 minutes until golden brown. Serve warm. Makes 12 mini garlic monkey breads.
**Note: I just cooked mine in a small baking dish an made a monkey bread loaf. It made enough for 6 people and they were big servings.

Zucchini Muffins
My friend Melissa made these last night and her hubby was eating the batter and said it was delish!! She said that he also ate the first one that came out of the oven and he was moaning while he ate it! :D She says they are "fabulous" .... thanks Melissa, I can't wait to try them!!!!

Cinnamon Honey Butter {like Texas Roadhouse}
Recipe From: Fly Through Our Window via Melissa
You’ll need:
2 sticks of butter at room temp
1 cup of powdered sugar
1 cup of honey
2 teaspoons of ground cinnamon
Directions:
I used the whisk attachment for my mixer and whipped the butter {make sure it’s soft and room temp}. I added to it the powdered sugar, then the honey, then the cinnamon. Whip it good. Scrape the sides. Whip it again.


Then spoon it into your precious little 4 oz jars {I found ‘em at Wally World}. If you can’t find the small ones, your friends and neighbors would be more than happy to receive a larger jar of it! The measurements above yielded 6 small jars. You can doll them up with a fabric scrap and tag!

Overnight Baked Blueberry French Toast

Recipe From: Jessica
Makes 8 Servings
For the French Toast, Process:
1 8oz. package of soft cream cheese
1/4 cup packed brown sugar
1 tsp. minced orange zest
10 slices thin-sliced cinnamon swirl bread (like Pepperidge Farm)
Whisk:
3 eggs
1/2 cup milk
1 tsp. almond extract
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
For The Topping Sprinkle:
1 cup fresh or frozen blueberries
1/4 cup slivered almonds
Melt:
4 Tbsp. unsalted butter
1/4 cup packed brown sugar
For The Syrup, Combine:
1 cup fresh or frozen blueberries
1/2 cup pure maple syrup
2 Tbsp. fresh orange juice
Directions:
1. Coat a 9x13 baking dish with nonstick spray.
2. For the French toast process: cream cheese, 1/4 cup brown sugar and zest in a food processor until smooth. Line bottom of baking dish with bread slices, cutting pieces to fit. Spread half cream cheese mixture over bread. Continue layering bread and cream cheese, ending with bread.
3. Wish together eggs, milk, almond extract, vanilla, cinnamon and nutmeg. Pour over top of bread. Then cover with plastic wrap and refrigerate 8 hours or overnight. (After adding the egg mixture, the French toast will look soupy. Don't worry, all of it will be absorbed.)
4. Preheat oven to 375. Remove plastic wrap from dish.
5. For the topping, sprinkle 1 cup blueberries and almonds over the top of French toast. Melt together butter and 1/4 cup brown sugar, drizzle over French toast. Bake until bubbly and set - about 45 minutes. Then remove from oven and set rest - about 15 minutes.
6. For the syrup combine 1 cup blueberries, maple syrup, and orange juice in a small sauce pan. Simmer syrup until heated through, about 10 minutes, then serve over French Toast.

Homemade Cinnamon Sugar Doughnuts
This Recipe I stole (I'm seem to be stealing a lot of recipes lately) from my friend Camille ... looks great and easy!
SO EASY!! Get Pillsbury biscuits but not flaky kind. Separate biscuits and then take a small cookie cutter and make doughnut holes in the middle. Fry over medium heat. When cooled dip in butter and then dip into cinnamon sugar or you can make a powder sugar and milk icing. They were GOOD and so easy and fast!

Lemon Blueberry Cream Cheese Loaf
Ingredients:
2 cups granulated sugar
1/2 cup light butter
1/2 (8-ounce) block cream cheese, softened
3 large eggs
1 large egg white
3 cups all-purpose flour, divided
2 cups fresh or frozen blueberries
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8-ounce) carton lemon low-fat yogurt
2 teaspoons vanilla extract
Cooking spray
1/2 cup powdered sugar
4 teaspoons lemon juice Preparation
Directions:
• Preheat oven to 350°.
• Beat first 3 ingredients at medium speed of a mixer until well-blended (about 5 minutes). Add eggs and egg white, 1 at a time, beating well after each addition.
• Lightly spoon flour into dry measuring cups; level with a knife. Combine 2 tablespoons flour and blueberries in a small bowl, and toss well. Combine remaining flour, baking powder, baking soda, and salt. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture.
• Fold in blueberry mixture and vanilla; pour cake batter into a 10-inch tube pan coated with cooking spray.
• Bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.
• Cool cake in pan 10 minutes; remove from pan.
• Combine powdered sugar and lemon juice in a small bowl; drizzle over warm cake. Cut with a serrated knife.

Cinnamon Apple Braid

Makes 1 bread (approximately 12 servings)
For the Apple Filling:
3 medium-size Granny Smith apples
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons lemon juice
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons lemon juice
For the Bread:
2 1/2 cups bread flour
1/4 cup granulated sugar
1 tablespoon instant yeast (I prefer SAF Instant Yeast)
3/4 teaspoon salt
1 cup warm water
2 1/4 teaspoons vegetable oil
1/4 cup granulated sugar
1 tablespoon instant yeast (I prefer SAF Instant Yeast)
3/4 teaspoon salt
1 cup warm water
2 1/4 teaspoons vegetable oil
For the Glaze:
1/3 cup confectioner’s sugar, sifted
5 teaspoons whipping cream
1/2 teaspoon vanilla extract
Pinch of kosher salt
Pinch of nutmeg
1/3 cup confectioner’s sugar, sifted
5 teaspoons whipping cream
1/2 teaspoon vanilla extract
Pinch of kosher salt
Pinch of nutmeg
Preheat the oven to 350 degrees Fahrenheit.
How to Make the Apple Filling:
Peel, core, and slice the apples into thin slices, then cut the slices in half. Toss the apple pieces with the sugar, cinnamon, and lemon juice. Bake the apple filling in an 8-inch square baking pan (or 9-inch pie tin) for 15 minutes. Remove from the oven and set aside. (Note: Do not turn the oven off at this point. You will be using it to bake the finished braid.)
How to Make the Bread:
While the apple filling is baking, begin preparing the bread dough. Mix the dry ingredients together in a large mixing bowl. Add the water and oil and mix the dough for 6 minutes using an electric mixer on medium-high speed.
Spray a smooth clean surface with cooking spray and turn the dough out onto the surface. Knead the dough briefly to give it a smooth surface (this will only take several turns of the dough to accomplish). Spray a rolling pin with cooking spray and roll the dough out into a large rectangle, about 12-inches by 16-inches in size. Lift onto a greased baking sheet.
Using a pizza cutter or sharp knife, cut each side into strips about 1-inch wide down each side, leaving the center third of the dough uncut. Spread the apple filling down the middle third of the dough. Fold strips of dough into the center, crisscrossing the filling by alternating strips from each side. Lightly press ends to seal, and straighten out the braid with your hands, if necessary, to straighten.
Bake the braid in the oven for 25 minutes, or until golden brown. Remove from the oven and let the braid cool for several minutes.
How to Make the Glaze:
Whisk together the glaze ingredients in a small bowl until blended and smooth.
Brush the glaze in a thick coat over the entire surface of the apple braid while it is still cooling. Carefully transfer the braid to a cooling rack set on a baking sheet (to catch drips) to finish cooling and prevent the bottom of the braid from becoming soggy from sitting in any pooling glaze. Slice and serve.

Tortillas
I went to the grocery store today and a package of tortillas was over $5.00 - I said heck with that! So I made my own, it was so simple and they taste way better then store bought ones!
Makes 8 medium tortillas
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1 cup warm water
3 tablespoons olive oil
2+ tablespoons vegetable oil for frying tortillas
Directions:
1)In a large bowl, combine flour and salt. Stir in oil then water.
2)Turn onto a floured surface; knead 5-12 times. Divide dough into 8 portions. On that same lightly floured surface, roll each portion into circle - make sure you roll them very thin or they will be too much like bread and not a tortilla.
3)In a large nonstick skillet heat 2 tablespoons of vegetable oil. Once oil is hot, cook tortillas for about 1 minute on each side or until lightly browned. Repeat process until all the tortillas are cooked. (Note: I placed a paper towel on a large plate and then placed the cooked tortilla on the paper towel, then placed another cooked tortilla on top of that paper towel and so on until I was done. Once they were all cooked I patted them dry - just to get any extra oil off them)
Keep/Serve warm.

Banana Bread
Recipe From: My Aunt Irene
Ingredients:
1/2 Cup butter
1 Cup sugar
2 Eggs
1 cap full of vanilla
3 Mashed ripe bananas
2 Cups flour
1 teaspoon baking soda
1 dash of salt
Chopped Candied Nuts
Directions:
Mix the first 5 ingredients in a bowl, add the dry ingredients, then the nuts. Bake in a greased loaf pan at 350 for 40-50 minutes or until golden brown. Makes 1 large loaf or 2 small ones.

Apple Muffins

Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

½ cup butter
1 cup white sugar
2 eggs
1 ¼ teaspoons vanilla extract

1/3 cup packed brown sugar
1 tablespoon all purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Directions:
Step 1: Pre-heat the oven to 375 degrees. Grease a 12 cup muffin pan. In a medium bowl mix together flour, baking powder, baking soda, and salt. In a large bowl beat together butter, sugar and eggs until smooth. Mix in vanilla extract. Stir in apples and then gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
Step 2: To make cinnamon topping- in a small bowl mix brown sugar, flour, and cinnamon. Cut in butter until the mixture is like coarse crumbs. Sprinkle over the tops of the batter in the muffin pan.
Step 3: Place into the oven and bake for 20 minutes or until a toothpick comes out clean. Remove from the oven and allow to cool.

1/4 cup 100% Apple Juice
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/8 teaspoon salt
1 teaspoon baking powder
1 cup fresh or frozen blueberries
Topping:
2 teaspoons sugar
1 teaspoon ground cinnamon
Directions:
In a mixing bowl, cream together butter, sugar, apple sauce and apple juice. Beat in eggs, milk and vanilla. Combine flour, salt and baking powder; add to creamed mixture just until combined. Gently fold in blueberries.
Pour into a 9-by-5-by-3-inch loaf pan.
Combine sugar and cinnamon; sprinkle over top.
Bake at 350°F for 45 to 55 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Cream Cheese Squares

Ingredients:1 (8 ounce) can refrigerated crescent roll dough
1 (8 ounce) package cream cheese
1/2 cup white sugar
1/2 teaspoon vanilla extract
1/4 cup margarine, melted
2 tablespoons white sugar
1/2 teaspoon ground cinnamon

1.) Preheat oven to 350 degrees & then Grease a 9x13 inch pan.
2)Press one can of the crescent rolls into the bottom of the prepared pan. In a medium bowl, mix together the cream cheese, 1/2 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. Combine the remaining 2 tablespoons of sugar and cinnamon; sprinkle over the top.
3)Bake for 25 to 30 minutes in the preheated oven, or until the top is crisp and golden.

Blueberry Streusel Muffins

Ingredients:
1/4 cup butter, softened
1/3 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
2-1/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1-1/2 cups fresh or frozen blueberries
STREUSEL:1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter
Directions:In a large bowl, cream butter and sugar. Beat in egg and vanilla; mix well. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in blueberries.
Fill 12 greased or paper-lined muffin cups two-thirds full. In a small bowl, combine the sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over muffins.
Bake at 375° for 25-30 minutes or until browned. Cool for 5 minutes before removing to a wire rack. Serve warm.

EASY HOMEMADE PUMPKIN BREAD

Okay ladies and mom... This recipe is sooo yummy and sooo easy! Living up in Idaho, I'm still learning how to do things with the lack of humidity compared to Houston. Anywho... this recipe is the bomb diggity yo-LOL I can't imagine how good it will be when I know what I'm doing :P
*You can make it with fresh pumpkin or canned* Makes 2 loaves :o) One for you and one to share! I sent one home with our good friend Holly for her family (or just her LOL Holly) to enjoy~
Ingredients:
*2 cups fresh cooked pumpkin or one 16 (the ones I saw were like 15 something but the recipe calls for 16 :P whatever hee hee)
* 3 1/2 cups all purpose flour (not self-rising)
* 2 tsp baking soda
* 3 cups white sugar (can be subsituted with Splenda or 50% of each. I'm not a fan of artificial sugar substitues but it you are diabetic this helps a lot)
* 4 eggs beaten or 4 Tbsp. ground Flax seed plus 12 Tbsp water
* 1 cup vegetable oil or 1 cup applesauce
* 1 1/2 tsp salt
* 2 tsp cinnamon
* 2 tsp nutmeg
* 2 tsp ground cloves
* 1/2 cup water if using fresh pumpkin/2/3 cup if using canned
Directions:
1. Pre-heat oven to 350 degrees F
2. In a large bowl mix all dry ingredients
3. In a med/lg bowl beat eggs, then add all other wet ingredients-mixing well. Then add to dry mixture--mixing well again
4. Pour into two non stick or lightly greased loaf pans
5. Bake approximately 1 hour at 350F (I had to bake mine for 1hr 15min)
6. Test with knife/toothpick.. or whatever fun thin long thing you can find lol If it comes out clean it's done. If not.. it's not done. LOL Just watch it closely and test until the toothpick/knife comes out clean~Enjoy~

Red Lobster Biscuits

1 1/4 lbs. Bisquick
3 oz. Freshly Shredded Cheddar Cheese
11 oz. Cold Water
Garlic Spread:
1/2 Cup Melted Butter
1 tsp. Garlic Powder
1/4 tsp. Salt
1/8 tsp. Onion Powder
1/8 tsp. Dried Parsley
Directions:
-To cold water, add bisquick and cheese, blending in a mixing bowl. Mix until dough is firm.
-Using a small scoop, place the dough on a baking pan lined with baking paper. Bake in 375 degree oven for 10 to 12 minutes or until golden brown.
-While biscuitts bake, combine spread ingredients. Brush baked biscuits with garlic topping.

CHEESE TOAST

This recipe is from my husband. When he was a child his Dad would make this as a breakfast but we eat it with most meals as a side not the main course. It seems like such a simple thing and I thought everyone knew about this toast, but lately people have been asking about it, so here it is ...
From the kitchen of: Chili
Ingredients:
Butter (soft)
Shredded Cheddar cheese
Garlic Salt
Any type of bread
Directions:
Turn broil on your oven on HIGH. Take bread and spread butter on it, sprinkle lightly with garlic salt, and top with cheese. Broil in oven until light brown & crispy.

Holly's Monkey Bread

I got this recipe when I was little and I was a Brownie in Girl Scouts, they taught us how to make this! I think it was the first recipe my mom would let me cook on my own.
Ingredients:
3 Can refrigerated dinner rolls or biscuits
1 Cup Sugar
2/3 Cup Brown Sugar
1 Tablespoon Cinnamon
6 Tablespoons Butter or Margarine
Directions:In a plastic bag mix sugar and cinnamon. Cut biscuits into quarters and shake in bag with sugar mixture. Place coated biscuits in a greased baking dish.
In a small saucepan, heat butter and brown sugar until boiling. Pour hot mixture over biscuit pieces. Bake in preheated oven at 400 for 15 - 18 minutes or until top is golden brown. Serve warm.
