Turkey Avocado Sandwich

 A.K.A ... the BEST thing you'll ever put in your mouth ... EVER!!  My friend Ruth gets all the credit for this one ... she introduced me to this sandwich and now it's our favorite meal when we have play dates. I think we need to start using 2 avocados though because we like to take the extra from our sandwiches and eat it with pita chips, but there is never enough. Enjoy this one today ... and tomorrow ... and the day after that .... yes you really will want to eat it every day :)

To make 2 sandwiches, you'll need:
4 slices of white bread (you know the kind that sticks to your teeth when you try to talk)
Mayo
Red onion - thinly slices
Tomato - sliced 
Avocado - mashed and add a little lime juice & garlic salt. 
Deli sliced turkey (I've done ham and it's good too) 

Directions:
1. Add a thin layer of  mayo to each slice of bread. Top one slice with onions..

2. Add a nice helping of avocado to the slice with no onions on it... 

3. Top the avocado side with tomatoes...  {my mouth is watering}

4. Add your turkey to the mix ...

5. Then put it all together and serve with any extra avocado and pita chips ...

YUM YUM YUM to the last bite (actually I turned this into 3 bites because I wanted to savor it)!!!!!!

Note: if you're thinking about trying wheat, ciabatta bread, or making a panini out of this or adding cheese ... wipe that thought right out of your head :) we tried all these options and they were all no bueno ... just trust us when we say you need some white bread in your life, your mouth and belly will thank you!

The Spanglish Sandwich

I found this on Pinterest and it was pretty de-lish, my hubby LOVED it. Enjoy!

Makes 1 sandwich

Ingredients:
4 slices of bacon
1 slices of any cheese you like (I used swiss)
2 slices of toasted wheat bread

1 tbsp of mayo
2 tomato slices
2 leaves of lettuce
1 teaspoon butter
1 egg

Preparation:

1. Cook the bacon until crisp, drain on paper towels

2. Place slices of cheese on one side of toasted bread. Place in toaster oven or under broiler to melt.

3. Spread mayo on other slice of bread top with bacon, sliced tomato, and lettuce

4. On non-stick skillet, melt butter over medium heat. Fry egg, turning over briefly when the bottom is set (keep yolk runny)

5. Slide finished egg on top of lettuce, top with other slice of bread (cheese-side down
genius)

6. Place sandwich on plate and slice in half, letting yolk run down sandwich

Turkey Panini

I got a panini grill for Christmas. I didn't think I would like it but I love it! I made one today and it was delish. I love how the sandwich is warm and crunchy but still cool and fresh.

Ingredients:
Olive Oil
Miracle Whip
Swiss Cheese
Turkey
Tomato
Sprouts
Salt
Pepper
Oregano
Ciabatta bread

Directions:
Plug in your panini grill - set the heat to max to warm the grill.

Cut your ciabatta bread bread in half. Take a paper towel. Pour a little olive oil on the paper towel and brush the bread with the oil. Just brush the sides that the grill with touch. I used maybe a couple tablespoons of oil because the paper towel soaked a lot of the oil up. But I didn't by any means soak the bread.

Then open the bread up and build your sandwich. I put the miracle whip on both sides of the bread., then a slice of swiss cheese, then turkey, then tomato, then salt, pepper, oregano, then the sprouts.

Once your sandwich is built put it in your panini grill ... let it do it's magic and enjoy!!
