How To Cut A Watermelon Into Cubes

HERE IS ANOTHER GREAT TIP I FOUND ON PINTEREST!!!!!

Step #1:  Cut the melon in half (after you have rinsed it)

Step#2: Cut the end off one of the halves.
IMG_9849

Step #3:  Place the melon face down on your cutting board.
IMG_9852

Step #4:  This is the tricky part. Angle your knife and start cutting off the rind.
IMG_9853
Rotate the melon and remove the rind all the way around.  Important tip:  You will be tempted to only remove the white part  and get as close as you can to the red, while saving the precious red part of the melon.  BUT – if you don’t remove enough, then you will taste the bitter/sour flavor of the rind.  In my experience, it is best to not only cut off all of the white rind, but cut slightly into the red part.  Trust me.  You will love your watermelon this way.

You have now finished the hardest part.  The rest is a breeze.

Step #5:  Slice horizontally into 3 sections.

Step #6: Cut into pieces – whatever size your prefer.

Now chill in your fridge and enjoy some ice cold juicy watermelon!

Oven Fried Bacon

What you need:
Bacon
Cookie sheet
Foil

Instructions:
*Turn your oven broiler on HI (or low if you want - I'm always in a hurry so I do it on hi).

*Place foil on the cookie sheet. I use a flat cookie sheet so I place on piece of foil on the bottom and then I take a second sheet of foil and fold the sides up and place my bacon inside. The bacon should not touch - if they do the will stick together. You can leave about a quarter inch between of space between each slice of bacon.

*Place cookie sheet with bacon into the oven and bake for 3-6 minutes. Flipping half way between. When the bacon is browned and crisp drain on paper towels. Make sure you watch it because it can burn VERY FAST when cooking on broil! (I burn it all the time because I get distracted by my baby!)

I save my grease in a small container and use when cooking green beans.**post coming soon :)

Spinach Salad

1 bag of Spinach - rinsed and dried
3 hard boiled eggs - sliced
5 strips of bacon - cooked and crumbled
"Girard's" Spinach Salad Dressing

Place spinach in bowl, top with bacon bits and eggs, pour dressing over the top, mix and serve right away
Notes: I could drink the dressing it's so good, but my husband likes just a little so I just mix the salad with no dressing and then we each add are own dressing. Serve it mixed with the dressing immediately or the salad will become soggy.

Tip: Whenever I fry up some bacon I ALWAYS save the grease. Then I add a spoonful of the grease to my green beans when I make them - add a little salt, pepper and minced garlic ... YUM!!

The Pioneer Woman Cooks

One blog that I get recipe ideas from is The Pioneer Woman and she now has her own show on the Food Network which I LOVE to watch and she now also has her own cookbook, which I just got and I have to say it's the best cookbook I've ever owned! It is all in color, there is pictures of every recipe, there is step-by-step (with pictures per step) directions and it's real comfort, home, country food! I sat down and read it all like it was a novel today :) I'm really excited to try her recipes!

MONTHLY DINNER MENU

Ever have a hard time thinking of what to make for dinner?? I used to until I started making monthly dinner menus. At the start of each month I print out a calendar, and for each day I put something down for that night's dinner. Then I check my freezer and cupboards to see what things I don't have that I need to make those meals. I make a shopping list and then some time that first week of the month I buy my groceries ... yes for the whole month! I only go back to the store if I need fresh produce. This has helped me save us soooo much money buy not having a ton of impromptu shopping trips, save me time and I don't have to wonder what to make for dinner every night. Here is my menu for this month ... on average my shopping trips for the month is LESS then $150.00!! That of course includes other items we need besides just dinners. Just thought I would share this money saving tip I use ... hope it helps in your home!

How to Freeze Dairy Products

**Always write the date on the item before freezing it.

**Make sure to allow for expansion when freezing liquids.

BUTTER: Freeze high-quality butter made from pasteurized cream. If butter is unsalted, it will lose it’s flavor over time, so try to only freeze for a short amount of time (around a month). Regular Butter can freeze for 6-12 months. Margarine can be frozen for up to 12 months.

CHEESE: Cheese gets crumbing after being frozen- so it’s best to shred before freezing it. Freeze it wrapped in foil or a freezer bag.

COTTAGE CHEESE: Cottage or Ricotta Cheese can be frozen for up to a month. Cream Style Cottage Cheese may separate when thawed.

CREAM CHEESE: Can be frozen. I have noticed a slight change in consistency and only freeze it if I will be using it to cook with.

CREAMER: Liquid Coffee Creamer can be frozen for up to 1 month. I have actually never done this, and so I am not sure about consistency.

HALF & HALF and LIGHTER CREAMS: These lighter creams do not freeze well

HEAVY CREAM: Freeze only heavy cream containing 40 % or more butter fat. After it’s been frozen it will not whip to full volume. You can keep in the freezer for 1-2 months and will freeze better if you transfer it to a different container, like a plastic or glass tupperware container.

MILK: Pasteurized homogenized milk can be frozen. Let thaw completely before you use it, and store in the refrigerator while it thaws. Shaking Milk ONCE THAWED will help restore a normal consistency. I open the cap before putting it in the freezer, to allow room for expansion- and then freeze for up to 1 month.

SOUR CREAM: Can be frozen, but will loose it’s smooth texture. I only freeze Sour Cream when I will be using it to cook with.

YOGURT: Yogurt is similar to Sour Cream and will get grainy after it’s thawed. I like to freeze yogurt, if I will be using to it make smoothies after it’s thawed.

WHOLE EGGS: Crack eggs into a bowl and stir gently to break up to yolk. These can be kept frozen for up to a year. I freeze into a mold, and then put them in a freezer bag with the date and number of eggs. I have heard that if you are freezing eggs to later cook with desserts, that you should add in 1 teaspoon sugar for 1 cup of eggs. If you will be using them for other uses, you can add 1 teaspoon salt for 1 cup of eggs. (I have never actually done that, I’ve just read it- anyone done this?). You can also scramble eggs and then freeze them.
