Roasted Pork Loin with Peppers and Balsamic Onions

Ingredients:
1 pork tenderloin, about 3/4 pound
1 medium onion, quartered
1 1/2 cup chopped peppers
2 cloves garlic, crushed
1 tbs extra virgin olive oil
1 tbs balsamic vinegar
salt and pepper
Directions:
Preheat oven to 450 degrees.  In a baking dish toss pork, onions, peppers, garlic, olive oil, balsamic and salt and pepper.  Bake for 20-25 mins depending on thickness of pork (internal temp of 150).  Half is intended for lunch tomorrow which is a roasted pork wrap that I'll give you later.  I also added a bit of crushed red pepper to this just to spice it up a tad.  You can also make a salad or some brown rice with this for a bigger meal.  Me, I'm just adding red wine :)

**NOTE:
Here is the lunch for today from last nights left overs...

Leftover pork sliced thinly
1tbs pesto
sliced sun dried tomatoes (about 1/3 of a cup)
1-2tbs mayo
whole wheat tortillas
mozzarella cheese

MIx pork, veggies, pesto, tomatos and mayo together.  Pile in tortilla and add cheese. That's it so easy and yummy and a good way to use leftovers.  I heated mine up in the microwave for about 1 min.
