Fast & Easy Italian Chicken
I needed something FAST & EASY for dinner and I had some left over rotisserie chicken in my fridge so I combined a couple of my favorite recipes and came up with this. It was simple and delicious! With prep and cook time, dinner was on the table in under 30 minutes!
What You Need:
Left over rotisserie chicken
1 package of cream cheese - softened
1 package of Italian dressing mix
1 can of cream of chicken soup
2 Tablespoons butter
4-6 (more if you want) Ritz crackers - crushed
Minute Rice (for just the 2 of us I make 1 1/2 cups)
Directions:
Preheat oven to 375
Place a medium pan on the oven over medium heat. Add soup, cream cheese & dressing mix. Once the mixture is well mixed and there are no lumps in it add chicken. Stir. You don't need to cook this - just get it all mixed up, then add chicken mixture to a small baking dish.
In a small skillet add butter. Once melted add crushed Ritz crackers. Just cook enough to get the crackers well coated in the butter. Add the crackers to top of the chicken mixture.
Bake for 20 - 25 minutes or until bubbly. Serve over rice with garlic bread, fresh green salad and we did cottage cheese with peaches too!
