Cheesy Potato Casserole

1 can cream of chicken soup
3/4 cup sour cream
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups shredded cheddar cheese
1 package hash browns - thawed
(I also add about 1/8 cup minced onion)

1. Preheat oven to 350.

2. In a large bowl mix together all ingredients.  

3. Coat a 9x13 baking dish with cooking spray. Spoon everything the baking dish. Top with my cheese if you like. Bake uncovered for 45 minutes, or until bubbly.

Note: you could mix in green onions, jalapeno slices or ham too!

Makes 8 - 1 cup servings.
