Recipe From: Gloria K.

Mix in a medium bowl:
1 Can Black Eyed Peas (drained)
1 11oz. Can White Shoepeg Corn (drained)
2 Avocados, diced
1/2 Cup Tomato, diced
2/3 Cup Chopped Green Onions
2/3 Cup Chopped Cilantro

1/4 Cup Olive Oil or Canola Oil
1/4 Cup Red Wine Vinegar
2 Cloves Minced Garlic
1 tsp. Cumin
Salt & Pepper to taste

Combine dressing ingredients in a small bowl and then mix with the above "caviar"/salsa mixture. Enjoy!
